Bombay Duck Kababs
large Bombay ducks. 1-inch piece ginger. 1 medium onion. 6 flakes garlic. 4 green chillies. 1/2 small bunch corriander leaves. 1/2 tsp. turmeric powder. 1 tsp. ground cumin seeds. Salt and chilli powder to taste. 2 tblsps. rice flour.
Cut open the fishes lengthwise and-take out the middle-bone. Wash them nicely and set aside. Grind the remaining ingredients with the exception of rice flour to a paste. Stuff the ground paste into each fish. Roll nicely in flour and shallow fry till crisp and brown. Serve piping hot.
